Butterscotch Chocolate Chip Bars

Ingredients
- 1 (10-ounce) package butterscotch chips
- 1/2 cup butter
- 2 cups graham cracker crumbs
- 1 (8-ounce) package Neufchatel cheese, softened
- 1 can (14-ounce) sweetened condensed milk
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 325 degrees F.
- Heat the chips and butter on high in the microwave for 1 1/2 to 2 minutes or until chips are melted, stirring every 30 seconds.
- Add the graham cracker crumbs and set aside 1/2 cup of the mixture.
- Press the remaining crumb mixture in 9-inch x 13-inch baking pan.
- In mixing bowl, beat Neufchatel cheese until smooth. Add the milk, egg, and vanilla. Mix well.
- Stir in the chocolate chips. Pour over crust. Sprinkle with reserved crumb mixture.
- Bake for 30 minutes or until a toothpick inserted near the center comes out clean. Store in refrigerator.
